I'd make a few changes to the vehical/cast roster.

First is the Pegbike... unless we're using Awakening Marth. I'd rather stick a bit closer to FE lore for defaults for them. Not sure it it would mean replacing the Pegbike, or using a female FE rep instead of Ike. I'd rather keep the Peg bike and boot Ike and let player swaping break FE lore myself.

Next, I agree, combine Nana and Popo to make room for a few other highly vehical based nintendo franchise even if they aren't racers. I'd love to see Adv wars, and/or drill dozer in this. They may not be suited as a fighter in smash bros, but a racing game might suit them better.
(as for how to handle them in other karts, maybe karts adjust a bit for certain racers, and the ice climbers just get double dash like versions for all of them. I mean guys like bowser might need to increase the size of some of them)

Finally one vehical addition: Someone from Stunt race FX. 2WD would likely work best... but 4WD might work well too.

As for tracks: From the games without an actual racing spin off I'd nominate:
Zelda-Gerudo valley and or Lon lon ranch.
Metriod - Tourian (Seriously, racing to the escape music as the place self destructs would be amazing)
That's about it.
Speaking of Nana and Popo, there was a very brief presence of a miiverse post on the fan site that compiles all the pics of the day. It had a Polar bear enemy from smash run crashing down in front of Zelda and was captioned "the pic of the... Tomorrow?" Since then this has been removed, so it could easily just be a mistake, because like I said it was on the fan site, but if it did have any precedence, I wonder if it entails a future reveal of Ice Climbers.

Maybe Nana could be an alt. costume?

Put 'em both in a Zamboni.
That, or just have them separate characters and have the entire thing like Double Dash

What if Nana followed closely behind Popo in a second cart? Alternatively, two carts immediately side by side.
Super Smash Kart? Please, that's casul babby shte.

I'd be 100% down for a Smash MOBA though.
Noooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooooo

Smash FPS.
smash bros. would probably be incredible in any genre, to be honest
Honestly I'd like to go the opposite route and make some Smash Bros knock-offs dedicated exclusively to specific Nintendo franchises. Like a Smash Bros whose roster is made up of all Pokemon fighters. Or all Zelda characters. Or all Mario etc etc. They could make a whole series of them and people would buy them up like hotpants.
Both.

Everything.

There is no Nintendo, they are now The Smash Bros. Company.
Oh and Timber is owned by Rare not Nintendo.

Anyway, if there was a Smash Racing game the roster would not have to follow the example of the Smash fighting game.

Anyway my roster would be this:

LIGHTWEIGHT
Diddy Kong
Kirby
Fox
Falco
Pikachu
Olimar
Little Mac
Villager
Ness

MIDDLEWEIGHT
Mario
Luigi
Peach
Link
Zelda
Yoshi
Samus
Pit
Captain Falcon
Marth

HEAVYWEIGHT
Bowser
Donkey Kong
Wario
Ganondorf
Ridley
King Dedede
Charizard
Mewtwo
Ike
R.O.B.
Ridley's too big to fit on a cart. Cute

If that's the case, why was he allowed to appear in Diddy Kong Racing DS, whereas Conker and Banjo were not?

Dragoon is back. I thought the idea was kind of cool back during Brawl's development, but collecting those pieces can get pretty distracting.

He wasn't in any super-important Microsoft project that Microsoft wanted exclusive rights to no matter what

Unless you count the cover art to Kinectimals
