The only Capcom fighting game I've ever actually played is Final Fight One for the GBA, which was ages ago too (although I sort of feel like playing it again now). I think I also remember trying out SNK vs. Capcom: The Match of the Millennium for the Neo Geo but the controls felt too loose.
But yeah never played any of those proper Street Fighter games, although then again I've never really been a big fan of fighting games other than Tekken 3 and DBZ: Supersonic Warriors 2.

puggsoy, Final Fight One, if I recall correctly, is not a fighting game, but rather a beat-em-up (walk on streets, beat up thugs, proceed to the next level). Though, the Final Fight and Street Fighter series walk along together, even sharing the same universe (the appearance of Cody/Guy/Hugo/Rolento/Sodom, and others in SF games)
I for one don't play fighting games much, but I remember enjoying Darkstalkers. I love the mystical creatures and their wacky moves, and all the spritework. SFII was fun too, though I wasn't great at it.
Another unrelated fighting game I liked to play was World Heroes 2 for the SNES. It pit up characters based on historical figures from different times, such as militar robots, indians, warriors, vikings and even an American football player in a fight. It also had interesting mechanics, such as ressing back on the exact time a projectile connects, reflecting it, and a Death Match mode, with hazards on the stage and a tug-of-war styled HP bar.

Even though it was a blatant SF ripoff, I've always remembered World Heroes from when I was a kid. I think it was mainly thanks to Rasputin. He had moves that made big yellow hands (presumably his psychic energy I guess) reach out and one of his grabs had him squeeze the opponent over and over. My brother and I always found that really funny looking.
However, the first one is a REALLY BIG SF ripoff. I never played the second one until years later, but it was mildly better in that regard. Still fun overall. Also it had a cooler boss character who wasn't just rehashing other fighters, although that was another thing I remembered years after playing the first one, the T-1000ish transformations of the boss character.

I LOVE Capcom fighting games
even though I mostly only played Street Fighter games , I mostly play Hyper SFII ( PS2 ), SFII ( On SNES, it's my first SF game ), SFA 2 and 3, SFIII 3S, SSFIV and SFxT, and I usually play as Ibuki, Makoto, Guy ( I just with him started so not much ), Blanka and Rolento
Oh and I play Pocket Fighter.
just dropping in to say I loved Mega Man: The Power Battle and its sequel Battle & Fighters The Power Fighters, even though they are very small for fighting games.
also the only SF I've ever played was Super Street Fighter II Turbo for the GBA so lol.

Ah well. Fighting games and beat-em-ups don't really differentiate themselves for me since I rarely play either and they both focus on fighting (and some, like Tekken 3, have both modes). Thanks for pointing that out though.

I forgot I played Marvel Super Heroes, MVC and MVC2 too ( I played 3 once ) : x.

Rasputin is the shit, the telekinetic hands are really memorable, along with his laughter
Also my sister nicknamed him 'Jesus' due to his looks and we'd always laugh when the 'Jesus Hug' connected.
I never played the first one, so I don't know how much of a rip-off it is. As I said before, World Heroes 2 was really cool and I liked the different gameplay elements than SFII.

Although I've shifted more towards SNK fighters in the past couple years, I still love me a good Capcom fighter, especially Street Fighter 3: 3rd Strike and Street Fighter Alpha 2 (sorry, some things in 3 bug me way too much). I've always mained Ken m'self, and in SF3's case, Sean as well. I also loved the first Marvel vs. Capcom, usually choosing Megaman and Spiderman. When Capcom isn't fucking lazy and constantly rehashing resources, they make incredibly solid fighting games. As an addendum that might piss off some of you, I've not yet played the Darkstalkers games. Sorry.
Since the World Heroes series has been brought up: the first one is decent at best, but they got a lot better after that, with the best probably being WH2 Jet. I actually quite enjoy the World Heroes games, despite them being obvious cash-ins on SF2, and I was glad to see SNK revive some characters for Neo Geo Battle Coliseum. I especially enjoyed the goofy-ass humor of the series, which is very apparent in the games' endings.
Lastly, I'm just gonna admit this: I think that the Fighters History games are solid, and I love 'em. Massive rip-offs of Street Fighter 2? Oh, maliciously, but they're still very competent outside of the creativity department. FH Dynamite is probably the closest to an SF2 experience you'll get on the Neo Geo. Plus, the last boss is Karnov. Motherfucking KARNOV.

I have heard about this Fighter's History before and how it was a rip off of Street Fighter. but personally, if a game uses another as a base and still manages to be solid, then I think it isn't that bad. Even more considering that the original game isn't on the console, which makes a valid reason IMO.
Related to fighting games, I really love the soundtracks. SFII, SFA, MvC, Darkstalkers, all have great tunes. It's a shame that nowadays fighting games all have techno happy songs.

If you made a mistake and actually meant Capcom vs SNK 3, then no, that doesn't exist. However, we can wait forever for the super awesome Tekken X Streetfighter (Namco's Streetfighter X Tekken).
