I usually don't rip animations, BUT just this one time, here's the animations (I think I converted them to a usable format

Anyways, to rip models and animations from Super Mario Odyssey (as well as Wii U games and other Switch games that use the BFRES format), all you need is Switch Toolbox, and use it to open the BFRES file. The rest should be pretty easy to figure out, and I hope this helps!
