it's not a grammar issue, there's nothing grammatically wrong with the phrase "i could care less," the rules of the english language allow those words to be together like that, I don't think you know what grammar actually IS

you're trying to convey that you don't care
so if you say you couldn't care less (like you're supposed to), you're saying you are the minimum level of care; your care level is zero
if you COULD care less, that tells us almost nothing at all; you could be anywhere from 1 to 100, because those are all NOT the minimum amount of caring, they are above it
