For a multi-millionaire with a team of programmers you'd think Mojang would have either a lot more updates/more progress towards a full release of Minecraft or a substantial amount of progress on his second game.

Though technically because Minecraft is officially in beta he doesn't have to add anything, just remove the current bugs.

I just one day hope he'll optimize the game. It's not fun if a process takes up about half of your memory.

Uh, aren't there only 4 actual programmers?
And as far as I know, money doesn't magically increase productivity...

It's not so much the money Mojang is making that confuses people, it's where that money goes.
From my understanding Notch is doing the clever thing and using the money from Minecraft to establish himself properly, setting up a proper team, paying for office space and equipment, and so forth.
They even have another game being worked on tentatively in the background, which in my mind is good planning if he wants to keep Mojang alive after Minecraft eventually dies down.
Not to mention basic running costs, like bandwidth fees for his site, and the rather nifty cloud solution for game updates and account verification, which isn't cheap but does get around the early growing pains preventing people from playing when the authentication server periodically died.

And if you look at the last few updates they're actually still doing a considerable amount of work despite their offices being worked on and the recent spat of conventions and such, provided Notch keeps a level head (which so far he seems to be doing) and they don't fall into the dreaded trap of project creep, I'd say they're nicely on track.
If it was a realistic option I'd happily invest money in them.

Updates:

* New pixelated Minecraft logo (no longer 3D blocks)
* Added tameable wolves (Only found in Forests/Taiga, rare)
* Added Cookies
* Sleeping in a bed now resets your spawn position
* Holding shift while climbing will hang on to the ladder
* Spiders will no longer trample crops
* Lots and lots of infrastructure for Statistics lists and Achievements
* Sheep spawn in any color. (Confirmed: Brown, Pink)
* Movement in flowing water is slower.
* Flowers and Mushrooms are more common. (unconfirmed)
* Mushroom can be find in trees and on sand

Bugfixes:

* Beds do not always work as a spawn point.

I heard that because Mojang is based out of sweden, the government gets 60% of the profits from minecraft

That was because his studio was originally a sole-proprietorship, so he had to pay normal personal income tax instead of business tax. Now that they've incorporated, their taxes is much smaller.
