Its not a bad idea, and you could just give people who still want to sign up an extra week to do so.

There is now a late sign-up list that will go on until NEXT FRIDAY I will be accepting anyone who still wants to sign up late on their own secret santa list. They will be making gifts for anyone else who forgot to sign up!
