Would I have to give credit in my game for sprites that are placeholders?

No matter what the credit tag says, credit is never required for rips. Conversely, no matter what the credit tags says, credit is always required for customs. If you are using something only in development and it won't ever be seen by the public or included in the released version's files, you don't have to credit. But if it's custom work and in any way can be seen by anyone other than you, I'd say it's best to credit.
