When you encounter the sprites you want, create the quicksave/savestate with F1. You can find this save in "sstates", which is a subfolder in epsxe.

This was pretty easy to rip. Original files on the right, assembled version on the left. Sprites were cut out with 0% tolerance, so only the black colour vanished.

Here you can see how I did it:
