Okay, so someone on the GV discord made this guide to ripping GV3 stuff, including it's sprites. Asked him if it's okay to share with you guys.
He uses Renderdoc for this guide.

Looks interesting, but is a bit harder without a proper PC to run the Switch Emulator (i don't have a proper PC to do that actually)
