I could see Boshi as a skin if not an echo.
What would make Boshi a cool echo to say the least is that he's faster than the other Yoshis. Come to think of it I would love to see that one day Nintendo just gets the rights to all the Super Mario RPG characters from square and implement them into their core series if Smash Ultimate proves to have Geno in it.
Back on topic however I think that Birdo would be better off being a clone rather than a full on echo. Because I don't see Birdo exactly copying every move yoshi has (There hasn't been a moment where I've seen Birdo stick his tongue out to eat people and lay them into eggs. Have you?)
