I think Spacewar! was the first game to really make video games an art personally. Came out like 45 years before Bioshock.
As for Metacritic and popular opinion, critics seem to be okay at recognizing really shitty games, but in general videogame critics just like to regurgitate popular opinion back at people over and over again (look at all those top XXX games lists which position SMB1 or ZeldaoT or Chrono Trigger or Portal as The Best Game Of All Time, lol). This is a problem that seems unique to the videogame industry too; the film industry has many different critics with many different opinions and tastes, but in this industry we have critics who all appreciate the same videogames and all have the exact same taste (which kind of defeats the purpose of even having criticism in the first place!).

a hipster video gamer
No he's a normal person. A "hipster" is someone who, like many people at some point, notices that many "mainstream" things are dumbed down and simplified to appeal to the lowest common denominator (i.e. biggest) audience, but then they make the mistake of extending this observation to all popular things, and also assume that if something is unpopular it cannot be dumbed down. A normal person, in contrast, develops some degree of critical faculty and is able to distinguish between good and bad regardless of popularity.
