With the bow, you CAN aim in with the joystick or D-pad maybe, I forget which. However, not with the crossbow. Also I don't know if aiming actually effects the distance the arrow will go. It does, however, give you a better idea of where it WILL go at long distances.

Or if you were asking how to aim the arrows at all, hit triangle to double-hand the bow and then press the trigger it's assigned to.. I think. Sorry if I'm wrong, the game's so second nature that I forget the actual button assignments when I'm not holding the controller.
