The folder in the first post has been updated with the Crown Tundra Pokémon and trainer models now. Odd how there's still a gap in the internal numbering for the Pokémon even after both DLCs were released.
The second UV channel is usually just for the eye textures if I recall. But anyway, if a texture doesn't look correct, you'll either need to edit the texture directly to mirror it (open it in an image editing program, extend the horizontal canvas size to double that of the original and paste a mirrored copy in the other half), or by applying a horizontal mirror onto the material. Check out some of the models on The Models Resource already if you need an example of that.
