I managed to extract a sample of models from Pokémon Sword: a random creature and the Rival model. It seems that this game follows the same file types as in Let's Go.
The files inside the .GFPAK can be extracted with the BMS script, and the subsequent .BNT texture files can be converted to DDS. However, when it comes to .GFBMDL model files, the Let's Go MAXScript in this forum doesn't output anything.
Maybe someone else has better luck.
