From what I can see of the files in HxD, it seems like the .NUX files are archive files for the models themselves. They seem to be compressed in another file format called .nut.

I don't know if this helps at all, but that's what I got out of Vegeta's .NUX file. I also saw what could be references to bones in the first .AMB file, but I'm not exactly sure, considering when I did the same thing with a Raging Blast 2 .SPR file, I saw texture names.

Hopefully this gives a bit of a lead for how to extract these models, but that's about all I could find in these.
