Could you help me understand how to cut sprites from a spritesheet? And how to remove the colored background?

I would like to recover all the individual images and without the purple background.

You have to use a graphics program like Photoshop or one of its free alternatives:

Medibang Paint for Pro

Krita
https://krita.org/en/

PhotoFiltre 7
https://www.photofiltre-studio.com/pf7-en.htm

Also you need to have some sort of background, the absence of it is called transparency and a function you can activate within a graphics program.
You can also use the selection tool, mark the area with the sprites you want to copy and then copy & paste it on your template.
