I have the textures ripped, but models are completely flat and I can't do anything with them. If I made the models myself, and they're as accurate as I can possibly make them to the in-game models, is that acceptable to upload even though it's not the exact model from the game?

I feel that if a model has to be manually rebuilt, then your best bet would be to submit it under "Custom / Edited".
