*Terminator 2: Judgement Day
*Quattro Sports: Soccer Simulator (Bootleg)
There's also a Simpsons game that got a sprite rip but it prolly doesn't count towards the list since it's a ROM hack.

I'll see if I can figure out some more NES things to rip.
Been mostly focused on other platforms (Arcade and Game Boy in general) so I haven't really dedicated much to NES, though I do have some ideas for currently un-ripped NES games.
