Here you guys go. Use the save state in the download on the 157 version of dolphin I linked and the characters should be t-posed in the character select screen, no cheat engine needed. I'm 70% sure save states are transferable between computers as long as you use the same dolphin version.

If that doesn't work, as last resort, search for this value [1818588016] in cheat engine as 4 bytes on the menu for mk Armageddon and you'll get about 20 addresses. go down the list and change the value for each like the guy says one by one until you get the t-pose. go back and forth between the css and the menu as you do this. Expect random crashes. You will have to re-scan for the value if it does. It's always the same though.

I've been able to get in and grab 24 of the 125 player character models/textures so far. Its not hard, just a lot of them to grab and convert to fbx with the skeletons intact. This unfortunately doesn't include "Kreate" parts, or Konquest enemy models. Still drawing a blank on how to get those with this method. Not sure where they're all saved. Pretty sure I'll complete the full set soon enough, as the method is easy and reliable. Once its all done, Guess i'll just post them all here for you guys to do whatever you want with them.

With that said, I would like some help with a few things, from folks who honestly know this kind of thing way better than i do. Think I'm in a little over my head for the goal i have in mind. If anyone can help me find the Konquest enemies, and kart racers, It would be super helpful. The step after that is animation ripping/then porting to unreal hopefully.
