I kinda feel like illustrating what I liked best about each game that I like:

Castlevania - What I grew up on. I used to get so frustrated... actually, I still would I bet. The furthest I've ever gotten without cheating was Death, who rocked me so hard, but I love the game.

Castlevania III - Furthest I ever got was the first boss inside Drac's castle. I've been meaning to go back and play it, because I love the system of the different characters.

Super Castlevania IV - I've never given this a proper FULL playthrough, but I really want to.

SotN - One of my favorite games in my library, I've beaten it fully many times over and will likely do so again.

Castlevania 64 - I liked this game (and it's 'expansion' or whatever you'd call it), but the platforming elements killed it. Otherwise, I had lots of fun with it.

Circle of the Moon - It was okay, but what I really LIKED was Dracula's final form. I thought it was pretty cool.

Lament of Innocence - I liked the boss fights and playing as Joachim. I didn't actually own it, but my friend would ask me to beat the bosses for him, which were pretty cool.

Curse of Darkness - The story made no sense and it made Trevor have INCREDIBLY long hair, but I liked this one, mostly because of the gameplay. It played kinda like Dynasty Warriors (a game that I like), but combine that with monsters and weapons that shoot lightning from the sky and Death's Scythe (which could make small scythes appear, just like Death).

Dawn of Sorrow - I liked the various souls you could obtain, but I almost wish he'd use the souls exclusively like the Glyphs in Ecclesia, although he can get some sweet weapons (Like Death's Scythe). I also loved Death in this game.

Order of Ecclesia - Hands down my favorite DS game. I love the bosses and the difficulty and the Glyph powers you acquire. I also love the second character mode, but it almost feels like cheating if you aren't playing Level 1 Cap mode with that character.

Also, any good games I haven't listed just means I haven't played them. I'd probably give any Castlevania at least a try.
the only Castlevania I've played is SOTN and the demo for the newest one

couldn't get into SOTN for some reason

i had a bit of trouble getting into sotn as well. the game doesn't really draw you in, but once you get into it, it's amazing.

it's worth checking out aria of sorrow though, that's the first one I played and it's probably a good starting point for getting into the series

probably wouldn't recommend harmony for your first game, its good but idk

Castlevania: Bloodlines
-Symphony of the Night
-Bloodlines
-Portrait of Ruin
-Harmony of Dissonance
-Aria of Sorrow

if only it's animations weren't so horrendous
The only one that I have and like is Chi no Rondo
I've played SotN, SCIV, CotM, and DoS.

SotN was as-toun-ding, and Super Castlevania IV and CotM were really fun. However, I couldn't really get into DoS for some reason.

Oh yeah, I also played Judgment. But uh, I'm not even going to bother elaborating on how I felt about that.
i like pretty much every castlevania game

even legacy of dorkness

walking up stairs Sick
NES ones were the only ones I could get into but I loved them. Cute
Everyone I played? I don't how many that is but that's most of them. I always loved Castlevania, even the new one out on xbox and ps3, sure it's not perfect but it may be a step in a good direction.
I generally like them all but my personal favorites are Castlevania, Super Castlevania IV, RoB, SoTN, and OoE.
CV1 is just pretty much the tightest title in the series, which works for it. It's pretty much the no-frills minimalist game, probably the best level design. The organic level design in SCVIV worked very well and I love the atmosphere and music. SoTN just has all these hidden trinkets in it that actually justify it in being an exploration title. Plus, it pretty much had the best level design of the Metroidvanias, or at least some of the most interesting area layouts in the more exploration-based titles.
I liked the increased exploration elements and all the alternate routes in RoB, and the interesting emphasis on action on OoE. OoE is probably one of the few recent Castlevanias I think that actually fleshed out its gameplay gimmick to something satisfying. Plus, it kinda cut back on all the excess and grinding that plagued the last two DS titles.

As for other titles, I actually prefer HoD to AoS despite how much more balanced AoS is. I just thought HoD had much more in interesting environments like the Skeleton Cave, and neat little things like the puzzles with all the Living Armors. AoS felt a bit banal in comparison despite its stronger tighter design. I feel that in an exploration title, you should, you know, have a chance to be lost. I pretty much like all the classicvanias. I don't like DoS, PoR, and I'm pretty neutral on CoTM. I like LoI mainly for the secret relics and combat, and bosses. CoD, I kinda just like the bosses, crafting and stealing system, and hate everything else. I don't understand why they made the Dynasty Warriors combat more shallow. They got rid of all the combo linkablity. The others, I haven't really played.
oh also Dracula X Chronicles is awesome

if it weren't for the fact that it's a remade CV game, then it's also for the fact that it comes with the original version of Dracula X AAAANNNNDDDD Symphony of the Night

plus it's a pain in the balls to beat. I was so ecstatic over beating Death, then I found myself at the boss rush level and I stopped playing entirely (because it was so hard ; ___ ; )
