You know it kind of does resemble SSBM Link's face. The eyes especially. It's not the right skin tone but it's very similar. Although when comparing to the Dissidia model you can see that the face uses a redone texture of his face of the Dissidia model for this one's face.
But yeah back then that's just how games were done. In N64 Ocarina of Time Link's tunic's aren't actually textured they're just vertex colored same as FF7 models. It was used a lot back then probably because it was simpler. Though compared to what we're used to and use pretty much everywhere now it's a bit out of our ability.
