We could do it like how it is done in God of War: Ascension:

As you can see, the manticore retains more of a arachnid body type, while you see the chimera show more fur.
So we could essentially make them different (not just type), but still show the characteristics that make that creature known.
And technically, there are many types of Chimeras also. So we could just make our own.
EDIT: I thought of another pokemon based on profession.
Why not a rock star (preferably a guitarist)?
it would be electric type, and we could give it features (paying homages) of like Angus Young (AC/DC) or John Lennon (Beatles).
Then have it evolve with a dark stone to make heavy metal, we could base it off of Kirk Hammett (Metallica), or Dave Mustaine (Megadeth). and it would be Electric/Dark type.
