In GIMP 2.8 you can go to Colors -> Info -> Colorcube Analysis. It'll give some information, including the number of colors in the image.
You can also generate the palette of the image by opening the Palettes tab, right-clicking inside it and selecting Import Palette. Select Image as the Source and then you can save it as a palette. You can export it to other external formats by right-clicking on it and selecting Export as, and choosing your format.
